Blueberry Cheesecake

This recipe for blueberry cheesecake is a quick and easy recipe for a delicious blueberry dessert.

To make this recipe, you will need:

  • 12 oz. cream cheese
  • 1/2 tsp. vanilla
  • 2 eggs
  • 1 graham cracker pie crust
Blueberry Topping:
  • 4 cups blueberries
  • 1/2 cup sugar
  • 1 cup water
  • 2 tbsp. cornstarch (+2 tablespoons water)
  • 1 tbsp. lemon juice

In a small bowl, mix the cream cheese, eggs, vanilla, and sugar.

Pour the mixture into the graham cracker crust.

Bake at 350 degrees for 35 minutes.

To make the topping:

Combine the blueberries with sugar and water.

Bring to a boil.

Soften the cornstarch in the 2 tbsp. water and slowly add to the berries.

Simmer about 15 minutes.

Add the lemon juice.

Spoon the warm blueberry glaze over the cooked cheesecake.

Refrigerate.
