Fresh blueberry cobbler is a delicious recipe and great way to add fresh blueberries to your dessert. Using blueberries to make cobbler also makes the recipe faster and easier than using other fruits that you would have to peel or pit.
- 4 cups blueberries
- 1/2 cup sugar
- 1 tablespoon cornstarch
- 1/4 teaspoon ground cinnamon
- 1 teaspoon lemon juice
- 3 tablespoons shortening
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
Preheat oven to 400 degrees.
Mix 1/2 cup sugar and the cornstarch in a saucepan. Stir in the blueberries and lemon juice.
Cook, stirring constantly, until mixture thickens and boils.
Boil and stir 1 minute.
Pour into un-greased 2-quart casserole dish. Keep it hot in the oven.
Cut the shortening into the flour, 1 tablespoon sugar, and the baking powder and salt in medium bowl, using a pastry blender or 2 knives until the mixture looks like fine crumbs.
Stir in the milk.
Drop dough by spoonfuls onto the hot blueberry mixture.
Bake 25 to 30 minutes or until topping is golden brown.
Serve warm. It also tastes great with vanilla ice cream.
