Summer Blueberry Recipes

This collection of summer blueberry recipes will add fun and nutrition to your summer. Blueberries are high in nutrition and using them in recipes is delicious too.

4th of July Favorites

Blueberries are great if you are celebrating the 4th of July because you can make them part of your red, white, and blue snacks and desserts. You can add blueberries and strawberries or raspberries on top of any of your favorite treats to make them look festive. Below are some of my favorites. I found some of these recipes at pillsbury.com I really like that site because the recipes are fairly simple.

Patriotic Cookie Pizza

To make this recipe you will need:
  • 1 roll of Pillsbury Create n Bake refrigerated sugar cookies
  • 1 eight ounce package of cream cheese, softened
  • 1/4 cup powdered sugar
  • 2 tsp grated lemon peel
  • 2 cups fresh raspberries
  • 1 1/2 cups fresh blueberries
  • 1/4 cup apple jelly, melted

First, preheat your oven to 350°F. You will need to spray the pan you will use with cooking spray (a pizza pan works great).

With floured fingers, place the cookie dough on the pan to make the "crust" of the pizza cookie.

Bake the dough for 15 to 20 minutes or until deep golden brown. Let it cool completely, about 25 minutes.

In a medium bowl, beat cream cheese, powdered sugar and lemon peel until fluffy. Spread over baked crust.

You can then add the blueberries and raspberries in the shape you would like. The frosting mixture gives you the white and you can then use the raspberries to make a star surrounded by the blueberries, or you can create your own red, white, and blue design.

Drizzle or brush with the melted jelly and refrigerate until set, about 30 minutes. This treat will need to be stored in the refrigerator.

USA Flag Cookies or Cake

You can top your favorite sugar cookie recipe or cake with this recipe to make a flag. Start by making a batch of your favorite cookie dough and baking it in a rectangle pan to form the flag base. When it is cooled completely, you are ready to make your flag.

For the topping, you will need:

  • 1 eight ounce package of cream cheese, softened
  • 3 cups powdered sugar
  • 1 tsp grated lemon peel or orange peel
  • 2 cups fresh raspberries
  • 50 blueberries (about 1/2 cup)

In a small bowl, beat cream cheese, powdered sugar and lemon peel until smooth. Spread this frosting on the cookie or cake.

Arrange the berries on the cream cheese mixture to resemble a flag, using 50 blueberries in upper left corner for stars and raspberries arranged in 7 rows to form stripes.

These are cute, patriotic treats that are delicious!
